Raw and ripe puer are two forms of dark tea from Yunnan, both made from the large-leaf Camellia sinensis, but they age in opposite ways. Raw puer, called sheng, is pressed and then left to mature slowly over years and decades, changing quietly with time. Ripe puer, called shou, is put through a controlled microbial fermentation known as wet piling, which was developed in the 1970s to give a mellow, aged character in months rather than decades. This is why raw puer can taste bright and astringent when young and grows deeper with age, while ripe puer arrives dark, smooth and earthy. Same leaf, two relationships with time.

This is real fermentation
Puer is one of the few teas where the word fermentation is used correctly. In ripe puer, live microbes work on the wet-piled leaf and change it, which is different from the enzymatic oxidation that makes black tea. Raw puer ferments too, but slowly and gently, through the years it is kept.
